The benchmark. You make five or more rolls (California, Rainbow, hand rolls), learn knife skills, fish sourcing, and sushi history. The real deal for Japanese cooking authenticity. Kyoko teaches out of her private residence in the SoMa / Peninsula area. Small intimate groups (max ~8). This is the class if you want to actually understand Japanese food culture, not just roll California rolls. She also offers a $115 basic Japanese cooking class (miso soup, dashi maki tamago, clay pot rice).

The "most bang for your buck" curriculum. You make sushi rolls, okonomiyaki, tempura, AND mochi ice cream from scratch -- it is basically four classes in one. Great if you want to learn a broader range of Japanese cooking, not just sushi. Chef Phoebe also runs a gourmet sushi dinner on Cozymeal with seasonal ingredients and dessert.
The expert-level class. Focused on fish selection, whole fish filleting, sashimi/nigiri technique, and advanced sushi rice preparation. Includes wine and beer pairings. This is the class for someone who already knows the basics and wants to level up to understanding the craft -- not just rolling things in nori. Chef Mari also runs a sushi-making competition format for team events.

A restaurant-run class from the South Bay's biggest sushi chain (7 locations). You make 3 sushi rolls and get a sake tasting. Accommodates vegetarian, vegan, gluten-free, and shellfish allergies. The vibe is casual and fun rather than deeply instructional. Good option if you are in the South Bay and want something easy to access without driving to SF.

Designed specifically as a date night: couples learn to recreate their favorite rolls together. Includes tea, coffee, water. Ages 18+. Lower rating than others (4.3 vs 4.7+) and reviews are mixed on depth of instruction, but the romantic setting in Palo Alto is unique. Best if the date > the sushi education.
San Jose-based class with a full 3-course meal included. Learn nigiri and seafood rolls from scratch. Chef Elham is experienced but reviews are polarized -- some rave, others note limited menu variety and occasional quality issues with side dishes.
